Charred brussels sprouts with bacon and toasted hazelnuts
You had me at bacon.
Ingredients
- 2 slices of bacon, cut into small pieces
- 12 Brussels sprouts, halved
- 3 tablespoons roughly chopped hazelnuts, blanched if you prefer
- 1 squeeze of lemon juice
- 1½ tablespoons olive oil
- salt and pepper
Instructions
- Drizzle ½ tablespoon of the olive oil into a medium frying pan and place the pan on medium heat. Add the chopped bacon and fry for 3 minutes, until the pieces are browned and crispy. Remove the bacon from the pan, leaving behind the rendered fat. and set the bacon aside.
- Add the Brussels sprouts to the pan and turn up the heat. Fry the sprouts for about 10 minutes, tossing them regularly, until they are nicely charred. Return the bacon to the pan and heat everything through. Then tip everything into a serving bowl or onto a plate.
- Top the sprout and bacon mixture with the hazelnuts, drizzle with a squeeze of lemon juice, and finish with the remaining olive oil. Season with salt and pepper, and serve.
